For the Meatballs
- 1 1/2 lb Ground Beef (80/20)
- 1/3 cup Almond Flour
- 1 Large Egg
- 2 tbsp Sugar-Free Ketchup
- 1 tbsp Yellow Mustard
- 1 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/2 cup Sharp Cheddar Cheese, cut into 16 small cubes
For the Topping
- 6 slices Cooked Bacon, crumbled
- 1/2 cup Shredded Sharp Cheddar Cheese
- 2 tbsp Dill Pickles, finely diced
- 2 tbsp Mayonnaise
- 1 tbsp Sugar-Free Ketchup
- 1 tsp Yellow Mustard
- 1 tbsp Sesame Seeds
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, almond flour, egg, sugar-free ketchup, mustard, onion powder, garlic powder, salt, and pepper. Mix gently until just combined.
Divide the mixture into 16 portions. Flatten each portion, place a cheddar cube in the center, and seal the meat around it. Roll into a smooth ball and place on the prepared baking sheet.
Bake for 18 minutes. Remove from the oven and top each meatball with shredded cheddar cheese. Return to the oven for 3 to 4 more minutes until the cheese is melted and bubbly.
While the meatballs bake, mix together the mayonnaise, sugar-free ketchup, and mustard in a small bowl to make a burger sauce.
Transfer the meatballs to a serving platter. Drizzle the burger sauce over the top, then sprinkle with crumbled bacon, diced pickles, and sesame seeds. Serve hot.
