  • 3 tbsp Coconut Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Fine Sea Salt
  • 3 Large Eggs
  • 2/3 cup Brown Sugar Substitute
  • 3/4 cup Full-Fat Plain Greek Yogurt
  • 1/3 cup Melted Unsalted Butter
  • 1 tsp Vanilla Extract
  • 1 tsp Maple Extract
  • 1/2 cup Chopped Pecans

For The Topping

  • 1/3 cup Chopped Pecans
  • 2 tbsp Brown Sugar Substitute
  • 1 tbsp Melted Unsalted Butter
  • 1/4 tsp Ground Cinnamon

Instructions
 

  • Preheat the oven to 325°F. Grease an 8-inch round cake pan and line the bottom with parchment.
  • Stir the topping ingredients together in a small bowl until the pecans are coated. Set aside.
  • Whisk the almond flour, coconut flour, baking powder, cinnamon, and salt in a bowl.
  • In a separate bowl, whisk the eggs, brown sugar substitute, Greek yogurt, melted butter, vanilla extract, and maple extract until smooth.
  • Mix the dry ingredients into the wet ingredients, then fold in the chopped pecans. Spread the batter into the prepared pan.
  • Sprinkle the pecan topping evenly over the batter. Bake for 32 to 38 minutes, until the top is fragrant and the center is set.
  • Cool for 25 minutes before serving so the maple pecan topping firms slightly.
