For the Brownies
- 1/2 cup Melted Butter
- 4 oz Sugar Free Dark Chocolate, melted
- 2/3 cup Powdered Allulose
- 3 large Eggs
- 1 tsp Vanilla Extract
- 1/2 cup Almond Flour
- 1/3 cup Cocoa Powder
- 1/4 tsp Salt
For the Mint Truffle Layer
- 6 oz Cream Cheese, softened
- 1/2 cup Powdered Allulose
- 1/4 cup Heavy Cream
- 1 tsp Peppermint Extract
- 4 drops Green Food Coloring
For the Ganache
- 4 oz Sugar Free Dark Chocolate
- 1/3 cup Heavy Cream
- 1 tbsp Butter
Preheat oven to 350F and line a 9x9 pan with parchment paper.
Whisk melted butter, melted chocolate, powdered allulose, eggs, and vanilla together until glossy. Fold in almond flour, cocoa powder, and salt.
Spread the brownie batter into the pan and bake for 22 to 25 minutes until just set with a fudgy center. Cool completely.
Beat the cream cheese with powdered allulose until smooth and fluffy, then beat in heavy cream, peppermint extract, and green food coloring until pale mint colored.
Spread the mint layer evenly over the cooled brownies and chill for 30 minutes to firm up.
Heat the heavy cream until steaming, pour over the chopped chocolate and butter, and let sit 2 minutes. Stir until silky smooth ganache forms.
Pour the ganache over the mint layer and tilt the pan to spread evenly. Chill 1 hour until the ganache is set.
Slice into bars using a warm sharp tool for picture perfect three layer pieces.
