Preheat the oven to 350°F and line an 8x8 inch baking pan with parchment paper, leaving an overhang. Mix the almond flour, cocoa powder, powdered sweetener, salt and melted butter, press firmly into the pan and bake for 10 minutes. Reduce the oven to 325°F.
Beat the cream cheese and powdered sweetener until completely smooth. Mix in the sour cream and vanilla, then add the eggs one at a time on low speed just until combined.
Divide the cheesecake base evenly between 3 bowls. Whisk the cocoa powder, extra powdered sweetener and heavy cream into the first bowl and leave the second bowl plain vanilla.
Blend the freeze dried strawberries in a food processor to a fine powder and stir it into the third bowl until evenly pink.
Spread the chocolate mixture over the crust. Spoon the vanilla mixture on top in small dollops and gently spread with the back of a spoon, then repeat with the strawberry mixture to finish with a pink top layer.
Bake for 40 to 45 minutes, until the edges are set and the center has a slight jiggle.
Cool for 1 hour at room temperature and chill for at least 5 hours. Lift out using the parchment and slice into 16 bars to reveal the three layers.
