2tbspPowdered Erythritol

For the Orange Cream Filling
8ozCream Cheese, softened
1/2cupHeavy Whipping Cream
1/3cupPowdered Erythritol(I always buy this one - amazon)
2tbspFresh Orange Juice
2tspOrange Zest
1/2tspOrange Extract
1tspVanilla Extract
1tspUnflavored Gelatin
2tbspWarm Water

Instructions
Line an 8x8-inch pan with parchment paper. Mix the almond flour, powdered erythritol, melted butter, and salt together until crumbly. Press firmly and evenly into the bottom of the pan. Refrigerate while you prepare the filling.
In a small bowl, sprinkle the gelatin over the warm water and stir. Let it bloom for 5 minutes until it thickens, then microwave for 10 seconds to melt it into a liquid.
Beat the cream cheese and powdered erythritol together with an electric mixer until smooth, about 2 minutes. Add the fresh orange juice, orange zest, orange extract, and vanilla extract. Mix until combined.
In a separate chilled bowl, whip the heavy cream until stiff peaks form.
Drizzle the melted gelatin into the cream cheese mixture while beating on low speed. Immediately fold in the whipped cream in two additions using a spatula, gently folding until no white streaks remain.
Pour the filling over the chilled crust and smooth the top. Refrigerate for at least 4 hours or overnight until completely set and firm.
Lift the bars out using the parchment and slice into 12 bars. Garnish with extra orange zest if desired.
