Ingredients
  

  • 1 tbsp Olive Oil
  • 4 oz Deli Roast Beef, chopped
  • 1/2 medium Green Bell Pepper, finely diced
  • 1/4 medium Yellow Onion, finely diced
  • 8 large Eggs
  • 4 oz Cream Cheese, softened
  • 1 cup Shredded Provolone Cheese, divided
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Worcestershire Sauce
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Instructions
 

  • Heat the olive oil in a skillet over medium-high heat. Add the diced green bell pepper and yellow onion and cook for 4 to 5 minutes, stirring often, until softened and lightly charred. Add the chopped roast beef and cook for 1 to 2 minutes more until warmed through. Remove from heat and set aside to cool slightly.
  • Preheat your oven to 350F. Grease a 12-cup muffin tin generously with cooking spray.
  • In a blender, combine the eggs, cream cheese, garlic powder, Worcestershire sauce, salt, and black pepper. Blend until completely smooth.
  • Pour the egg mixture into a large bowl. Fold in the sauteed pepper, onion, and roast beef mixture along with 3/4 cup of the shredded provolone.
  • Divide the mixture evenly among the 12 muffin cups. Top each egg bite with the remaining provolone, pressing it gently onto the surface.
  • Bake for 22 to 25 minutes, until puffed, set in the center, and the provolone on top is beautifully melted and bubbly.
  • Cool in the tin for 5 minutes before carefully removing. These deliver all the classic Philly cheesesteak flavors in a perfectly portioned, protein-packed bite.
