Instructions
Preheat the oven to 325°F and line a baking sheet with parchment paper.
Beat the softened butter and powdered monk fruit sweetener until creamy and lighter in color.
Mix in the egg yolk, rose water, and vanilla extract until smooth.
Stir in the almond flour, finely ground pistachios, baking powder, and sea salt until a soft dough forms.
Scoop the dough into 12 small mounds, roll gently, and flatten slightly on the baking sheet.
Press chopped pistachios onto the tops of the cookies.
Bake for 11 to 13 minutes, until the edges look set and the bottoms are lightly golden.
Cool on the baking sheet for 15 minutes before moving, since the cookies firm as they cool.
