This light and airy mousse captures all the cozy flavors of a pumpkin spice latte in dessert form. It's low carb and keto friendly, making it a guilt-free seasonal treat.
Pour the heavy cream into a large chilled bowl. Beat with an electric mixer on high speed until stiff peaks form. Transfer the whipped cream to a separate bowl and place it in the fridge.
In the same large bowl (no need to wash it), beat the cream cheese and powdered erythritol on medium speed until completely smooth and fluffy, about 2 minutes.
Add the pumpkin puree, instant espresso powder, pumpkin pie spice, and vanilla extract. Beat on medium speed until everything is perfectly combined and the color is uniform.
Gently fold the chilled whipped cream into the pumpkin mixture in three additions, using a spatula with slow sweeping motions. Be careful not to deflate the whipped cream as this gives the mousse its light, airy texture.
