Ingredients
  

  • 1 cup Heavy Whipping Cream
  • 8 oz Cream Cheese, softened
  • 1/2 cup Pumpkin Puree (not pie filling)
  • 1/3 cup Powdered Erythritol
  • 2 tsp Instant Espresso Powder
  • 1 1/2 tsp Pumpkin Pie Spice
  • 1 tsp Vanilla Extract
  • Whipped Cream for topping
  • Ground Cinnamon for dusting

  • Pour the heavy cream into a large chilled bowl. Beat with an electric mixer on high speed until stiff peaks form. Transfer the whipped cream to a separate bowl and place it in the fridge.
  • In the same large bowl (no need to wash it), beat the cream cheese and powdered erythritol on medium speed until completely smooth and fluffy, about 2 minutes.
  • Add the pumpkin puree, instant espresso powder, pumpkin pie spice, and vanilla extract. Beat on medium speed until everything is perfectly combined and the color is uniform.
  • Gently fold the chilled whipped cream into the pumpkin mixture in three additions, using a spatula with slow sweeping motions. Be careful not to deflate the whipped cream as this gives the mousse its light, airy texture.
  • Divide the mousse among 6 serving cups or glasses. Refrigerate for at least 2 hours until set and chilled through.
  • Before serving, top each mousse with a dollop of whipped cream and a light dusting of ground cinnamon.
