  • 4 oz Cream Cheese, softened
  • 2 tbsp Powdered Erythritol
  • 1 Egg Yolk
  • 1/2 tsp Vanilla Extract

For the Muffin Batter

  • 2 cups Almond Flour
  • 3 tbsp Unsweetened Cocoa Powder
  • 1/3 cup Granulated Erythritol
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 Large Eggs
  • 1/4 cup Melted Butter
  • 1/4 cup Sour Cream
  • 1 tsp Vanilla Extract
  • 1 tsp White Vinegar
  • 1 tbsp Red Food Coloring (or beet powder for natural color)

Instructions
 

  • Preheat your oven to 350F and line a 12-cup muffin tin with parchment liners.
  • Make the cream cheese swirl by beating together the softened cream cheese, powdered erythritol, egg yolk, and vanilla extract until completely smooth and creamy. Set aside.
  • In a large bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt.
  • In a separate bowl, whisk the eggs, melted butter, sour cream, vanilla, white vinegar, and red food coloring until the color is uniform and vibrant. Pour the wet ingredients into the dry and stir until a smooth, rich red batter forms.
  • Divide the red velvet batter evenly among the 12 muffin cups, filling each about two-thirds full.
  • Drop a generous tablespoon of the cream cheese mixture on top of each muffin. Use a toothpick to swirl it deeply into the batter in a circular motion, creating a beautiful marbled pattern on the surface.
  • Bake for 22 to 25 minutes, until the red velvet portion is set and a toothpick inserted near the edge comes out clean. The cream cheese swirl will be lightly golden.
  • Let the muffins cool in the tin for 10 minutes before transferring to a wire rack. Serve at room temperature or slightly warm. The cream cheese swirl stays beautifully soft and tangy against the tender red velvet crumb.
