Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
In a large bowl, whisk together the almond flour, powdered erythritol, and baking powder until evenly combined.
Add the ricotta cheese, egg, melted butter, orange zest, fresh orange juice, and vanilla extract to the dry ingredients. Stir everything together until a thick, slightly sticky cookie dough forms.
Scoop the dough into 16 equal portions using a tablespoon. Roll each one gently into a ball and place them on the prepared baking sheet about 2 inches apart. Flatten each ball slightly with the back of a spoon.
Bake for 14 to 16 minutes until the edges are lightly golden and the tops feel set when touched. The centers will still be soft and that is exactly what you want for a tender cookie.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. These are best served at room temperature and can be stored in an airtight container for up to 5 days.
