Pat pork chops dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
Heat olive oil in a large skillet over medium-high heat. Sear pork chops 4 minutes per side until deeply golden. Transfer to a plate.
Reduce heat to medium and add butter to the skillet. Add onions and mushrooms and cook 7-8 minutes until softened and browned.
Stir in garlic and thyme and cook 1 minute until fragrant.
Pour in chicken broth, scraping up any browned bits, then add heavy cream and parmesan. Simmer 3-4 minutes until the sauce thickens.
Nestle the pork chops back into the skillet, spoon sauce over the top, and simmer gently for 5 minutes until chops are cooked through and sauce is rich and creamy.
