Preheat the oven to 325°F and line a large baking sheet with parchment paper.
In a medium bowl, combine the almond flour, parmesan, dried minced onion, onion powder, garlic powder, salt, and black pepper. Add the sour cream and chopped chives, then stir until a smooth, slightly sticky dough forms.
Place the dough on a large piece of parchment paper and top with a second sheet. Roll the dough out as thinly and evenly as possible, aiming for about 1/16 to 1/8-inch thickness. Thinner crackers will be crispier.
Remove the top parchment and score the dough into small squares or rectangles using a pizza cutter. Prick each piece once or twice with a fork.
Slide the parchment onto the baking sheet and bake for 20 to 24 minutes, until the crackers are a light golden color across the surface and the edges are slightly darker.
Turn off the oven and leave the crackers inside with the door slightly ajar for 10 minutes. This extra time helps them dry out completely for maximum crunch.
Remove from the oven and let cool fully before breaking apart. Store in an airtight container at room temperature.
