Ingredients
  

For the Cake

  • 2 cups Almond Flour
  • 1/4 cup Coconut Flour
  • 3/4 cup Granulated Erythritol
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 4 large Eggs
  • 1/2 cup Butter, softened
  • 1/3 cup Sour Cream
  • 1 tsp Vanilla Extract

For the Strawberry Swirl

  • 1/2 cup Fresh Strawberries, finely chopped
  • 1 tbsp Granulated Erythritol
  • 1 tsp Lemon Juice

Instructions
 

  • Preheat your oven to 325F and grease a 9x5-inch loaf pan, then line the bottom with parchment paper.
  • Make the strawberry swirl by combining the finely chopped strawberries, granulated erythritol, and lemon juice in a small bowl. Mash with a fork until you have a chunky jam-like mixture. Set aside.
  • Beat the softened butter and granulated erythritol together with an electric mixer on medium-high speed for 3 minutes until light and fluffy. Add the eggs one at a time, beating well after each. Mix in the sour cream and vanilla extract until smooth.
  • In a separate bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Gradually add the dry mixture to the wet, mixing on low speed until just combined into a thick batter.
  • Pour two-thirds of the batter into the prepared loaf pan. Dollop the strawberry mixture in spoonfuls across the surface. Top with the remaining batter.
    Use a butter stick or thin spatula to drag through the batter in a zigzag pattern to create a beautiful swirl. Don't over-swirl or the pattern will disappear.
  • Bake for 55 to 65 minutes until the top is golden and a toothpick inserted in the center comes out clean. If the top browns too quickly, tent loosely with foil after 40 minutes.
  • Let the cake cool in the pan for 15 minutes, then turn it out onto a wire rack to cool completely before slicing.
