  • 1 3/4 cups Almond Flour
  • 1/4 cup Coconut Flour
  • 2 tsp Baking Powder
  • 1/4 tsp Fine Sea Salt
  • 3 Large Eggs
  • 2/3 cup Granulated Allulose
  • 3/4 cup Full-Fat Plain Greek Yogurt
  • 1/3 cup Avocado Oil
  • 2 tsp Vanilla Extract
  • 1/2 tsp Strawberry Extract
  • 3/4 cup Finely Diced Strawberries

For The Frosting

  • 4 oz Cream Cheese
  • 1/4 cup Unsalted Butter
  • 1/3 cup Powdered Allulose
  • 1 tsp Vanilla Extract
  • 2 tbsp Heavy Cream

Instructions
 

  • Preheat the oven to 325°F. Grease an 8-inch square baking pan and line it with parchment.
  • Whisk the almond flour, coconut flour, baking powder, and salt in a bowl.
  • In a large bowl, whisk the eggs, allulose, Greek yogurt, avocado oil, vanilla extract, and strawberry extract until smooth.
  • Stir in the dry ingredients, then fold in the diced strawberries. Spread the batter evenly in the pan.
  • Bake for 30 to 36 minutes, until the center is set and the edges are lightly golden. Cool completely in the pan.
  • Beat the cream cheese and butter until smooth. Beat in the powdered allulose, vanilla extract, and heavy cream until fluffy.
  • Spread the frosting over the cooled cake and chill for 20 minutes before serving.
