Ingredients
  

For the Crust

  • 1 1/4 cups Almond Flour
  • 1/4 cup Cocoa Powder
  • 1/4 cup Powdered Monk Fruit Sweetener
  • 1 tbsp Instant Espresso Powder
  • 5 tbsp Butter, Melted

For the Filling

  • 16 oz Cream Cheese, Softened
  • 8 oz Mascarpone Cheese, Softened
  • 3/4 cup Powdered Allulose
  • 3 Large Eggs
  • 1/2 cup Sour Cream
  • 2 tbsp Brewed Espresso, Cooled
  • 1 tsp Vanilla Extract

For the Top

  • 1/2 cup Heavy Cream
  • 2 tbsp Powdered Allulose
  • 1 tbsp Cocoa Powder

Instructions
 

  • Preheat the oven to 325°F and line a 9 inch springform pan with parchment paper.
  • Stir almond flour, cocoa powder, powdered sweetener, espresso powder, and melted butter. Press into the pan and bake for 10 minutes.
  • Beat cream cheese, mascarpone, and allulose until smooth and thick. Add eggs one at a time on low speed.
  • Mix in sour cream, cooled espresso, and vanilla until the filling is creamy.
  • Pour into the crust and bake for 45 to 55 minutes, until the edges are set. Cool slowly and chill for at least 6 hours.
  • Whip heavy cream and allulose until soft peaks form.
  • Spread the cream over the chilled cheesecake and dust with cocoa powder.
