Instructions
Preheat the oven to 325°F and line a 9 inch springform pan with parchment paper.
Mix almond flour, powdered sweetener, salt, and melted butter. Press into the pan and bake for 10 minutes.
Beat cream cheese and allulose until smooth. Add eggs one at a time on low speed.
Mix in sour cream, heavy cream, vanilla bean paste, and vanilla extract until the filling looks silky.
Pour into the crust and bake for 45 to 55 minutes, until the edges are set and the center gently wobbles. Cool and chill for at least 6 hours.
Sprinkle granulated allulose evenly over the chilled cheesecake.
Broil very briefly or use a kitchen torch until the top is glossy and caramelized, then let it set for 2 minutes before slicing.
