Ingredients
  

For the Crust

  • 1 1/2 cups Almond Flour
  • 1/4 cup Powdered Monk Fruit Sweetener
  • 1/4 tsp Salt
  • 6 tbsp Butter, Melted

For the Filling

  • 24 oz Cream Cheese, Softened
  • 3/4 cup Powdered Allulose
  • 3 Large Eggs
  • 1/2 cup Sour Cream
  • 1/4 cup Heavy Cream
  • 2 tsp Vanilla Bean Paste
  • 1 tsp Vanilla Extract

For the Brulee Top

  • 3 tbsp Granulated Allulose

Instructions
 

  • Preheat the oven to 325°F and line a 9 inch springform pan with parchment paper.
  • Mix almond flour, powdered sweetener, salt, and melted butter. Press into the pan and bake for 10 minutes.
  • Beat cream cheese and allulose until smooth. Add eggs one at a time on low speed.
  • Mix in sour cream, heavy cream, vanilla bean paste, and vanilla extract until the filling looks silky.
  • Pour into the crust and bake for 45 to 55 minutes, until the edges are set and the center gently wobbles. Cool and chill for at least 6 hours.
  • Sprinkle granulated allulose evenly over the chilled cheesecake.
  • Broil very briefly or use a kitchen torch until the top is glossy and caramelized, then let it set for 2 minutes before slicing.
