Tips
Stir the Mixture the Entire Time
Once the butter melts and the mixture starts bubbling, do not stop stirring even for a few seconds. Brown Swerve can go from perfectly thickened to burned really fast because it doesn’t behave exactly like regular brown sugar.
Use a wooden spoon or silicone spatula and keep scraping the bottom of the pan as you stir. This prevents hot spots from scorching the sweetener and gives you a smooth, even caramel consistency.
Know When the Mixture Is Ready
The 3 to 4 minute boil time is a guideline, but what you really want to watch for is the texture. Dip your spoon in the mixture and hold it up. If it coats the back of the spoon and doesn’t immediately slide off, it’s ready.
