Keto Pecan Pralines

These keto pecan pralines are one of my favorite low carb treats to make. They taste just like the classic Southern candy but without all the sugar.

Golden low carb pecan pralines

If you’ve been on keto for a while, you know how hard it is to find desserts that actually satisfy your sweet tooth. These pralines do exactly that.

They come together in about 20 minutes with just a handful of ingredients. No fancy equipment needed, just a saucepan and a baking sheet.

Sweet crispy keto pecan pralines

The brown swerve sweetener gives them that deep, caramel-like flavor you’d expect from traditional pralines. You really can’t tell the difference.

Keep them in an airtight container and they’ll last you all week. If they even make it that long.

Only 6 Simple Ingredients – No hard to find specialty items here just basic keto pantry staples you probably already have at home.

Recipe Ingredients

  • 1 cup Pecan Halves
  • 1/2 cup Brown Swerve Sweetener
  • 1/4 cup Heavy Cream
  • 2 tbsp Butter
  • 1/2 tsp Vanilla Extract
  • 1/8 tsp Sea Salt

How To Make

Step 1

Line a baking sheet with parchment paper and set aside.

Step 2

In a medium saucepan over medium heat, combine the brown swerve sweetener, heavy cream, and butter. Stir constantly until the butter melts and the mixture begins to bubble.

Step 3

Continue stirring and let the mixture boil for about 3 to 4 minutes until it thickens slightly and turns a deeper golden color. It should coat the back of a spoon.

Step 4

Remove the pan from the heat and quickly stir in the vanilla extract, sea salt, and pecan halves. Mix until every pecan is evenly coated.

Step 5

Working quickly, drop spoonfuls of the mixture onto the prepared parchment paper, forming small clusters about 2 inches wide.

Step 6

Let the pralines cool at room temperature for about 15 to 20 minutes until they are completely firm and set. Store in an airtight container at room temperature for up to one week.

Tips

Stir the Mixture the Entire Time

Once the butter melts and the mixture starts bubbling, do not stop stirring even for a few seconds. Brown Swerve can go from perfectly thickened to burned really fast because it doesn’t behave exactly like regular brown sugar.

Use a wooden spoon or silicone spatula and keep scraping the bottom of the pan as you stir. This prevents hot spots from scorching the sweetener and gives you a smooth, even caramel consistency.

Know When the Mixture Is Ready

The 3 to 4 minute boil time is a guideline, but what you really want to watch for is the texture. Dip your spoon in the mixture and hold it up. If it coats the back of the spoon and doesn’t immediately slide off, it’s ready.

If it still looks thin and runny, give it another minute. But don’t push it past 5 minutes or it can start to harden in the pan and become impossible to work with.

Toast the Pecans First

Before you start making the caramel, spread your pecan halves on a baking sheet and toast them in the oven at 350°F for about 5 to 7 minutes. This brings out a deeper, nuttier flavor that you won’t get from raw pecans.

Let them cool for a minute before stirring them into the mixture. Toasted pecans make a noticeable difference in how the final pralines taste.

Frequently Asked Questions

Can I use a different keto sweetener instead of Brown Swerve?

You can try using a brown sugar substitute from another brand like Lakanto Golden or a similar erythritol-based blend. Just make sure it measures 1:1 like sugar so the ratios stay the same.

Avoid using liquid sweeteners like monk fruit drops or stevia liquid, since the dry sweetener is what helps create that thick, caramel-like coating that holds the pralines together.
