How To Make
Step 1
Preheat the oven to 325°F. Line an 8-inch square pan with parchment and lightly grease it.
Step 2
Whisk the almond flour, cocoa powder, coconut flour, baking powder, and salt in a medium bowl.
Step 3
In a large bowl, whisk the eggs and allulose for 1 minute. Add the Greek yogurt, melted butter, espresso, and vanilla extract, then whisk until smooth.

Tips
Measure the Almond Flour the Right Way
The way you measure your almond flour makes a big difference in this cake. Scooping the cup straight into the bag packs in too much and leaves you with a heavy, dry result.
My favorite trick here is to fluff up the flour first, then spoon it into the measuring cup and level off the top with a flat edge. This keeps the crumb soft and tender the way it should be.
The same goes for the coconut flour since it soaks up a lot of moisture. Even a little extra can dry out the whole cake.
