Tips
Use Powdered Erythritol, Not Granular
If your erythritol isn’t powdered, the dalgona coffee layer won’t whip up properly. Granular erythritol doesn’t dissolve well in just 2 tablespoons of hot water, and you’ll end up with a gritty texture that never really gets fluffy.
If you only have granular erythritol on hand, just pulse it in a blender or coffee grinder for about 30 seconds until it turns into a fine powder. Same goes for the Swerve in the cream cheese layer – make sure it’s the confectioners/powdered version.
Get the Coffee Foam Really Stiff
