Baking something fresh in the morning is one of my favorite weekend rituals. This keto cranberry orange bread fills the entire kitchen with the best citrus smell.
Traditional fruit breads usually have a lot of sugar and regular flour that can spike your blood sugar. I made this version completely low carb and keto friendly so you can enjoy a thick slice without falling off track.

The tart cranberries pair wonderfully with the sweet orange glaze on top. Every bite has a soft crumb that feels just like a classic bakery loaf.
You only need basic mixing bowls for the batter, and the loaf stays moist for several days. It is great alongside a warm cup of coffee or hot tea.
If you are looking for an easy breakfast or afternoon snack, I think you will really enjoy this one. Let us get into the simple steps to make it.

How To Make
Step 1
Preheat the oven to 350°F and line an 8.5×4.5-inch loaf pan with parchment paper.
Step 2
In a medium bowl, whisk together the almond flour, coconut flour, baking powder and salt.

In a large bowl, beat the butter and granulated sweetener for 2 minutes until light and fluffy. Beat in the eggs one at a time, then mix in the sour cream, orange zest, orange extract and vanilla.
Step 4
Add the dry ingredients and mix on low just until combined. Gently fold in the cranberries.

Spread the batter into the pan and bake for 50 to 60 minutes, tenting with foil after 30 minutes, until a toothpick inserted in the center comes out clean.
Step 6
Cool in the pan for 15 minutes, then lift it out and cool completely on a rack.
Step 7
Whisk the powdered sweetener, heavy cream and orange zest until smooth and drizzle it over the cooled loaf. Let the glaze set for 15 minutes before slicing.

Tips
Pat the Cranberries Dry
After you cut the cranberries in half, I recommend patting them thoroughly with a paper towel.
Fresh cranberries release juice once sliced. Drying them keeps excess liquid from making the batter soggy around the fruit pockets.
Use Room Temperature Dairy and Eggs
Make sure your eggs and sour cream sit on the counter before you start. Cold ingredients will make the softened butter clump up into tiny bits when you mix them.

You will get the best results if everything blends into a smooth, creamy base before you stir in the dry ingredients.
Watch the Crust at Thirty Minutes
Almond flour browns much faster than regular wheat flour. I’ve found that setting a timer for thirty minutes is essential so you can check the top.
Cover the loaf loosely with foil as soon as it turns golden. This allows the center to bake through without burning the top crust.

Frequently Asked Questions
Can I use frozen cranberries instead of fresh ones?
Yes, frozen cranberries work well in this recipe without needing to thaw them first.
Simply chop them while frozen and gently fold them straight into the batter so they do not bleed color into the loaf.
