Recipe Ingredients

  • 1 1/2 lb Ground Beef (80/20)
  • 1/3 cup Almond Flour
  • 1 Large Egg
  • 2 cloves Garlic, minced
  • 1 tsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup Grated Parmesan Cheese
  • 4 oz Mozzarella Cheese, cut into 12 cubes
  • 12 slices Thin-Cut Bacon
  • 1 tbsp Sugar-Free BBQ Sauce (for brushing, optional)

How To Make

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set a wire rack on top.

Step 2

In a large bowl, combine the ground beef, almond flour, egg, garlic, Italian seasoning, salt, pepper, and parmesan cheese. Mix gently with your hands until just combined. Be careful not to overwork the meat or the meatballs will turn out dense.

Step 3

Divide the meat mixture into 12 equal portions. Take one portion, flatten it slightly in your palm, place a mozzarella cube in the center, and carefully shape the meat around it to seal completely. Repeat with all portions.

Step 4

Wrap each stuffed meatball tightly with one slice of thin-cut bacon, tucking the end underneath or securing it with a toothpick. Place the meatballs seam side down on the wire rack.

Step 5

Bake for 20 minutes. Remove from the oven and brush lightly with sugar-free BBQ sauce if desired.

Step 6

Return to the oven and bake for another 5 to 8 minutes, until the bacon is crispy and the meatballs reach an internal temperature of 165°F. Let them rest for 3 to 4 minutes before serving.

Tips

Keep the Mozzarella Cubes Cold

Cut your mozzarella into cubes and put them back in the fridge (or even the freezer for 10 minutes) right before you start forming the meatballs. Cold cheese holds its shape better and melts slower in the oven.

If the cheese is warm or room temperature when you wrap it, it melts too fast and leaks out through any small gap in the meat. You’ll end up with hollow meatballs and a messy baking sheet instead of that gooey cheese pull you’re going for.

Seal the Meat Around the Cheese Completely

When you place the mozzarella cube in the center, pinch the meat around it and make sure there are zero gaps or thin spots. Even a tiny opening will let the cheese escape while it bakes.

A good trick is to flatten the meat portion into a disc that’s a bit wider than you think you need. That way you have plenty of meat to wrap up and over the cheese without stretching it thin. Roll it gently between your palms to smooth out any cracks.

Use Thin-Cut Bacon

This recipe specifically calls for thin-cut bacon and it really matters here. Regular thick-cut bacon won’t cook through in time and you’ll be left with chewy, rubbery bacon wrapped around an overcooked meatball.

Thin-cut bacon crisps up faster and sticks to the meatball better as it shrinks during baking. It also wraps more easily around the ball without bunching up or leaving big overlapping sections that stay undercooked.

Frequently Asked Questions

How do I keep the mozzarella from leaking out while baking?

The key is making sure the meat mixture fully seals around the cheese cube with no gaps or thin spots. When you flatten the portion in your palm, make it wide enough so you have plenty of meat to fold up and around the cube, then pinch any seams closed.

Using cold mozzarella straight from the fridge also helps because it takes longer to melt. If you notice cheese oozing out, it usually means the meat layer was too thin in one spot, so just be generous when shaping them.
