These cheesy stuffed meatballs are a crowd favorite that deliver big flavor in every bite. Low carb and keto friendly, they're perfect for dinner or game day snacking.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set a wire rack on top.
In a large bowl, combine the ground beef, almond flour, egg, garlic, Italian seasoning, salt, pepper, and parmesan cheese. Mix gently with your hands until just combined. Be careful not to overwork the meat or the meatballs will turn out dense.
Divide the meat mixture into 12 equal portions. Take one portion, flatten it slightly in your palm, place a mozzarella cube in the center, and carefully shape the meat around it to seal completely. Repeat with all portions.
Wrap each stuffed meatball tightly with one slice of thin-cut bacon, tucking the end underneath or securing it with a toothpick. Place the meatballs seam side down on the wire rack.
Bake for 20 minutes. Remove from the oven and brush lightly with sugar-free BBQ sauce if desired.
Return to the oven and bake for another 5 to 8 minutes, until the bacon is crispy and the meatballs reach an internal temperature of 165°F. Let them rest for 3 to 4 minutes before serving.
