Keto Biscuits & Gravy Casserole

Biscuits and gravy has always been one of my favorite comfort food breakfasts.

When you eat keto, traditional flour biscuits and roux-based gravy are usually off limits because of the high carb count.

That is why I created this keto biscuits and gravy casserole. It gives you all the rich, savory flavors you miss without the extra carbs.

The base is a warm sausage gravy, topped with quick cheddar drop biscuits made from almond flour.

It is completely low carb and keto friendly, so you can enjoy a hearty morning meal and stay on track with your goals.

Recipe Ingredients

For the Sausage Gravy

  • 1 lb Breakfast Sausage
  • 1 1/4 cups Heavy Cream
  • 1/2 cup Chicken Broth
  • 2 oz Cream Cheese
  • 1/4 tsp Xanthan Gum
  • 1/2 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1/4 tsp Salt

For the Cheddar Biscuits

  • 1 1/2 cups Almond Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Salt
  • 2 Large Eggs
  • 1/4 cup Sour Cream
  • 4 tbsp Butter, Melted & Slightly Cooled
  • 1 cup Shredded Sharp Cheddar Cheese

How To Make

Step 1

Preheat the oven to 375°F and grease a 9×9 inch baking dish.

Step 2

Brown the sausage in a large skillet over medium-high heat for 8 to 10 minutes, breaking it into small crumbles. Leave the fat in the pan for flavor.

Step 3

Stir in the heavy cream, chicken broth, cream cheese, garlic powder, pepper and salt. Sprinkle the xanthan gum over the top while stirring, then simmer for 5 minutes until the gravy is thick enough to coat a spoon.

Pour the gravy into the baking dish and set aside while you make the biscuits.

Step 4

In a bowl, whisk the almond flour, baking powder, garlic powder and salt. In a separate bowl, whisk the eggs, sour cream and melted butter.

Step 5

Stir the wet ingredients into the dry until a thick dough forms, then fold in the cheddar.

Step 6

Drop the dough in 9 even spoonfuls over the hot gravy, leaving a little space between each biscuit.

Step 7

Bake for 25 to 28 minutes until the biscuits are puffed and deep golden and the gravy is bubbling. Let it rest for 10 minutes before serving.

Tips

Sprinkle the Xanthan Gum Slowly

Xanthan gum can turn into sticky, jelly-like clumps if you drop it into the skillet all at once.

My favorite trick is to dust it very lightly across the bubbling liquid with one hand while whisking constantly with the other.

This makes sure the powder dissolves smoothly and gives you a silky gravy instead of rubbery little lumps.

Let the Melted Butter Cool

Make sure your melted butter cools down until it is just lukewarm before you whisk it into the eggs.

If the butter is still hot, it will scramble the raw eggs right inside your mixing bowl.

From my experience, cooked bits of egg will make your biscuit dough rubbery and stop it from rising nicely in the oven.

Shred the Cheddar Yourself

You’ll get the best results if you buy a block of sharp cheddar and grate it yourself at home.

Bagged shredded cheese is coated in powdery potato starch that adds hidden carbs and keeps the shreds from melting smoothly.

Fresh cheese melts directly into the almond flour dough and keeps the baked biscuits moist and tender.

Frequently Asked Questions

What can I use if I do not have xanthan gum?

You can leave it out completely, but you will need to simmer the gravy for an extra few minutes so the heavy cream and cream cheese can reduce and thicken naturally.

Another option is to stir in an extra tablespoon of cream cheese, which helps create a rich gravy while keeping it low carb.
