- 1 1/4 cups Heavy Whipping Cream, Cold
- 1/3 cup Powdered Erythritol Monk Fruit Sweetener
- 1 tsp Vanilla Extract
- 1 tsp Unsweetened Cocoa Powder, For Dusting
How To Make
Step 1
Preheat the oven to 325°F (165°C) and line an 8×8-inch baking pan with parchment paper. Dissolve 1 tbsp espresso powder in 2 tbsp hot water. In a separate small cup, dissolve the 2 tsp espresso powder for the cream in 1 tbsp hot water and set it aside to cool.
Step 2
In a large bowl, whisk together the almond flour, coconut flour, granulated sweetener, baking powder and salt.
Step 3
Add the melted butter, eggs, sour cream, vanilla extract and the first dissolved espresso to the dry ingredients. Mix until a smooth, thick batter forms, then spread it evenly in the prepared pan.
Step 4
Bake for 26-30 minutes, until the center springs back and a toothpick comes out clean. Stir the brewed coffee with 1 tbsp powdered sweetener and brush it all over the warm cake. Let the cake cool completely in the pan.
Step 5
For the cappuccino cream, add the cold mascarpone, cold heavy cream, powdered sweetener, vanilla extract and the cooled espresso to a large bowl. Beat on low for 30 seconds, then on medium-high for 2-3 minutes until thick and fluffy with stiff peaks.
Step 6
Lift the cake out of the pan and swirl the cream generously over the top. Dust with cocoa powder and chill for at least 1 hour before cutting into squares.

Tips
Measure the Coconut Flour Carefully
Coconut flour absorbs a huge amount of liquid compared to other flours. Even a tiny bit extra can make your cake dry and crumbly.
I recommend using a spoon to scoop the coconut flour into your measuring spoon and leveling it off flat with the back of a butter knife.
Never pack it down into the spoon, or your batter will end up far too thick to bake properly.
Bring Wet Ingredients to Room Temperature
From my experience, using cold eggs or cold sour cream is an easy mistake to make. Cold ingredients will cause the warm melted butter to firm up into tiny solid specks.

You’ll get the best results if your eggs and sour cream sit on the counter for about 30 minutes before you start.
This keeps the batter smooth and ensures your cake bakes evenly in the oven.
Poke Holes Before the Coffee Soak
My favorite trick here is to gently poke holes all over the top of the warm cake with a toothpick before brushing on the coffee soak.
This allows the sweetened coffee to sink deep into the center rather than pooling on the surface.
It keeps the crumb exceptionally moist and gives you rich cappuccino flavor in every bite.

Frequently Asked Questions
Can I use regular cream cheese instead of mascarpone for the topping?
Yes, standard full-fat brick cream cheese makes a great substitute if you cannot find mascarpone.
Just soften it to room temperature first so it blends smoothly with the cold heavy cream without leaving small lumps.
