Recipe Ingredients
For the Ranch Seasoning
- 1 tsp Dried Dill
- 1 tsp Dried Parsley
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Dried Chives
- 1 tsp Salt
- 1/2 tsp Black Pepper
For the Casserole
- 2 lb Boneless Skinless Chicken Thighs, Cut Into Bite Size Pieces
- 1 tbsp Avocado Oil
- 4 oz Cream Cheese, Softened
- 1/2 cup Sour Cream
- 1/4 cup Mayonnaise
- 1/4 cup Heavy Cream
- 1 tbsp Lemon Juice
- 2 cups Fresh Baby Spinach, Chopped
- 10 slices Bacon, Cooked & Crumbled, Divided
- 2 cups Shredded Cheddar Cheese, Divided

How To Make
Step 1
Preheat the oven to 375°F and grease a 9×13 inch baking dish. Stir the ranch seasoning ingredients together in a small bowl.
Step 2
Toss the chicken with half of the ranch seasoning. Heat the avocado oil in a large skillet over medium-high heat and cook the chicken for 6 to 8 minutes until browned and cooked through. Add the spinach for the last minute just to wilt it.
Step 3
In a large bowl, whisk the cream cheese, sour cream, mayonnaise, heavy cream, lemon juice and the remaining ranch seasoning until smooth.
Step 4
Fold the chicken and spinach, half of the bacon and 1 cup cheddar into the ranch sauce. Spread into the baking dish.
Step 5
Top with the remaining cheddar and bacon.
Step 6
Bake for 20 minutes until bubbly and the cheese is melted and golden. Garnish with the green onions and serve.

Tips
Drain the Excess Pan Liquid
Chicken thighs and fresh spinach both release natural moisture while cooking in the skillet. If you pour all of those extra juices into the bowl with the sauce, your casserole can end up watery and thin.
I recommend scooping the cooked chicken and wilted spinach out of the skillet with a slotted spoon. This leaves the extra water behind so your rich cream sauce stays thick and creamy.
Soften the Cream Cheese Completely
Make sure your cream cheese sits on the counter until it is fully soft before you start whisking. If it is still cold from the fridge, it will break into tiny white lumps that will not blend smoothly into the sour cream and mayonnaise.

I’ve found that giving the block about 45 minutes to come to room temperature works best. If you are in a rush, you can warm it in the microwave for 15 seconds to soften it up evenly.
Shred Your Own Cheddar Cheese
You’ll get the best results if you buy a block of cheddar and shred it with a box grater. Bagged pre-shredded cheese is coated with starch powder to keep the shreds from clumping together in the package.
That extra coating prevents the cheese from melting smoothly and can cause grease to separate on top. Freshly grated cheese melts like a dream and keeps the dish truly low carb.

Frequently Asked Questions
Can I use chicken breasts instead of chicken thighs?
Yes, you can swap in chicken breasts if that is what you have in your fridge. Chicken thighs are naturally juicier and offer more fats for keto, so just be careful not to overcook chicken breasts in the skillet.
You can even use shredded rotisserie chicken to save some extra prep time on busy weeknights.
