If you have some cooked chicken in the fridge and need a quick dinner idea, this dish is for you.
Today I want to show you how to make my easy keto chicken cordon bleu casserole. It combines juicy chicken, deli ham, and a creamy dijon sauce that comes together in just a few minutes.

Staying on track with a low carb lifestyle is much easier when you have hearty dishes that actually taste good. Because this bake is naturally keto friendly, you can have a satisfying dinner while keeping your daily carbs low.
Instead of standard breadcrumbs, a buttery pork rind topping adds that classic golden crunch on top of the melted cheese.
It smells incredible while it bakes, and you only need one baking dish to pull the whole thing together.

Tips
Soften the Cream Cheese Completely
From my experience, whisking cold cream cheese with cold heavy cream leaves you with lots of tiny lumps in your sauce. Make sure your cream cheese sits on the counter until it is completely soft to the touch.
If you need to speed things up, you can warm it in the microwave for fifteen seconds. A soft base makes a silky sauce that blends smoothly over the chicken.
Pat the Ham Dry First
Deli ham usually carries a lot of moisture straight out of the package. If that liquid goes into the dish, it will thin out your cream sauce while baking.

I recommend blotting your ham slices with paper towels before chopping them. This quick step keeps your casserole sauce thick and rich.
Get the Right Pork Rind Texture
You’ll get the best results if you do not grind the pork rinds into a fine dust. Fine crumbs soak up the butter and become soft rather than crunchy.
My favorite trick here is to aim for the size of coarse breadcrumbs. That slightly larger crumb gives you the best crispy layer on top.

Frequently Asked Questions
What can I use instead of pork rinds for the topping?
You can swap the crushed pork rinds with coarse almond flour mixed with extra parmesan cheese.
Crushed keto crackers or toasted sliced almonds also work well to give you that same golden crunch.
