Recipe Ingredients

For the Filling

  • 3 tbsp Butter
  • 1/2 Medium Onion, Diced
  • 2 Celery Stalks, Diced
  • 1 Small Carrot, Finely Diced
  • 8 oz Mushrooms, Sliced
  • 3 cloves Garlic, Minced
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 2 oz Cream Cheese
  • 1/2 tsp Xanthan Gum
  • 1 tsp Dried Thyme
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 4 cups Cooked Chicken, Cubed
  • 1 cup Green Beans, Cut Into 1 Inch Pieces

For the Crust

  • 1 1/2 cups Shredded Mozzarella Cheese
  • 2 oz Cream Cheese
  • 1 cup Almond Flour
  • 1 Large Egg
  • 1/4 tsp Garlic Powder
  • 1 Large Egg, Beaten (For Brushing)

How To Make

Step 1

Preheat the oven to 375°F and grease a 9×9 inch baking dish.

Step 2

Melt the butter in a large skillet over medium heat. Cook the onion, celery, carrot and mushrooms for 7 to 8 minutes until softened, then add the garlic and cook for 1 minute.

Step 3

Pour in the chicken broth, heavy cream and cream cheese and stir until smooth. Sprinkle in the xanthan gum while whisking, then add the thyme, salt and pepper and simmer for 4 to 5 minutes until thick and creamy.

Step 4

Stir in the chicken and green beans and pour the filling into the baking dish.

Step 5

For the crust, microwave the mozzarella and cream cheese in 30 second bursts, stirring between each, until fully melted. Stir in the almond flour, egg and garlic powder and knead into a smooth dough.

If the dough feels too sticky, chill it for 10 minutes before rolling.

Step 6

Roll the dough between two sheets of parchment to the size of the dish. Lay it over the filling, tuck in the edges and cut a few small slits on top so steam can escape.

Step 7

Brush with the beaten egg and bake for 20 to 25 minutes until the crust is deep golden. Let it rest for 10 minutes so the filling sets before serving.

Tips

Sprinkle the Xanthan Gum Slowly

Xanthan gum is great for thickening low carb sauces, but it will turn into gummy clumps if you drop it all in at once.

I recommend dusting it lightly across the top of the liquid while whisking vigorously the entire time.

This helps the powder dissolve evenly into the cream, giving you a smooth gravy without any slimy lumps.

Mix the Dough While It Is Warm

Melted mozzarella firms up very quickly as it sits on your counter.

You’ll get the best results if you stir in the almond flour and egg immediately after the cheese comes out of the microwave.

If the cheese cools down and becomes too tough to mix, just pop the bowl back in the microwave for 10 to 15 seconds to soften it up again.

Let the Filling Cool Before Topping

From my experience, laying cheese-based dough over a boiling hot filling will cause the crust to melt prematurely and turn soggy.

I’ve found that letting the chicken mixture sit in the baking dish for about 5 to 10 minutes makes a huge difference.

Once the steam calms down, lay your rolled dough on top so it bakes into a firm, golden crust.

Frequently Asked Questions

How do I handle the crust dough if it is too sticky to roll out?

The best trick is to roll the dough out between two large sheets of parchment paper so it never touches your rolling pin or counter.

If the mixture still feels too soft to shape, place it in the refrigerator for about ten minutes so the melted cheese can firm up.
