  • 1 Large Egg
  • 1/2 tsp Smoked Paprika

  • 4 oz Smoked Gouda Cheese, cut into 14 cubes
  • 2 tbsp Fresh Cilantro, chopped
  • 1/4 cup Sour Cream, for serving
  • 1 tbsp Hot Sauce, for drizzling (optional)

How To Make

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the ground pork, chorizo, almond flour, egg, smoked paprika, cumin, and salt. Mix gently until the meats and seasonings are evenly blended.

Divide the mixture into 14 portions. Flatten each portion in your palm, place a smoked gouda cube in the center, and carefully mold the meat around it to fully seal the cheese inside. Roll into a smooth ball and place on the baking sheet.

Bake for 22 to 25 minutes until the meatballs are deeply browned on the outside and the chorizo is fully cooked through. If any cheese has leaked out, that is fine and those crispy cheese edges are delicious.

Cut the Gouda Into Even Cubes

Take your time cutting the smoked gouda into 14 cubes that are roughly the same size. If some cubes are too big, the meat layer around them will be too thin and the cheese will burst out during baking.

A good trick is to flatten the meat portion into a thin disc in your palm, set the cheese cube right in the middle, then fold the edges up and over like you’re closing a little package. Then roll it smooth.

If you feel the cheese poking through anywhere, just press a little extra meat over that spot.
