Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground pork, chorizo, almond flour, egg, smoked paprika, cumin, and salt. Mix gently until the meats and seasonings are evenly blended.
Divide the mixture into 14 portions. Flatten each portion in your palm, place a smoked gouda cube in the center, and carefully mold the meat around it to fully seal the cheese inside. Roll into a smooth ball and place on the baking sheet.
Bake for 22 to 25 minutes until the meatballs are deeply browned on the outside and the chorizo is fully cooked through. If any cheese has leaked out, that is fine and those crispy cheese edges are delicious.
Let the meatballs rest for 3 minutes. Arrange on a serving platter and top each meatball with a small dollop of sour cream, a drizzle of hot sauce if desired, and a sprinkle of fresh cilantro.
