If you miss having real, crusty bread on a low carb lifestyle, you are definitely not alone. Bread is usually the hardest thing to give up when you cut down on carbs.
That is why I created this keto cottage cheese artisan loaf. It gives you that rustic bakery feel without raising your blood sugar or loading you up with carbs.

Blending cottage cheese right into the dough helps create a soft inside while the outside bakes into a golden crust. You get great structure without needing any traditional wheat flour.
Because it is naturally low carb and keto friendly, you can stay on track while still enjoying a warm slice of bread with butter.
Let me show you how simple it is to mix this dough and bake it at home.
Why You’ll Love This Recipe
Real Bread Texture – The psyllium husk and cottage cheese create a chewy crumb with a genuine crispy crust.
No Eggy Flavor – Blended cottage cheese and egg whites provide pure bread taste without any strange egginess.

Rustic Bakery Look – Dusting the top with almond flour creates a gorgeous golden loaf with artisan charm.
Packed with Protein – Cottage cheese and egg whites naturally boost the protein to keep you feeling full.
Recipe Ingredients
- 1 cup Full-Fat Cottage Cheese
- 4 Large Egg Whites
- 1/2 cup Warm Water
- 1 tbsp Apple Cider Vinegar
- 2 cups Blanched Almond Flour
- 1/3 cup Psyllium Husk Powder
- 1 tbsp Baking Powder
- 1 tsp Sea Salt
- 1 tbsp Blanched Almond Flour, For Dusting
- 1/2 tsp Flaky Sea Salt
How To Make
Step 1
Preheat the oven to 350°F with a rack in the lower-middle position. Line a baking sheet with parchment paper.
Step 2
Add the cottage cheese, egg whites, warm water and apple cider vinegar to a blender. Blend until completely smooth and slightly frothy.
Step 3
In a large bowl, whisk together 2 cups almond flour, the psyllium husk powder, baking powder and sea salt, making sure there are no lumps of psyllium.
Step 4
Pour the blended mixture into the dry ingredients and mix for about 30 seconds, just until a soft dough comes together. Let the dough rest for 5 minutes so it firms up.
Step 5
With wet hands, shape the dough into a round dome about 6 inches wide and 2.5 inches tall and place it on the prepared baking sheet.
Dust the top with 1 tbsp almond flour and sprinkle with the flaky sea salt.
Step 6
Bake for 60 to 70 minutes, until the crust is deep golden brown and the loaf sounds hollow when tapped on the bottom.
Step 7
Transfer the loaf to a wire rack and cool completely, at least 1 hour, before slicing. The crumb finishes setting as it cools, so slicing too early can make it seem gummy.

Tips
Choose the Right Psyllium Husk
From my experience, you need to use finely ground psyllium husk powder rather than whole psyllium husks. Whole husks cannot absorb liquid fast enough, which leaves the loaf heavy and flat.
I also recommend choosing a brand known for staying blonde during baking. Some psyllium powders react with baking powder and turn your finished bread bright purple, even though it still tastes fine.
Blend the Cottage Cheese Completely
You’ll get the best results if you blend the wet ingredients until there are zero visible curds remaining. The liquid should look like smooth, frothy milk before you pour it into the dry bowl.

If you leave solid cheese bits in the mixture, they will melt into wet pockets while baking. That can leave you with gummy, uneven spots scattered through the center of your slices.
Check Your Water Temperature
Make sure your water is comfortably warm to the touch, similar to warm bath water. I’ve found that cold water will not activate the psyllium quickly enough to give the dough its proper body.
At the same time, never use hot or boiling water. Hot water can start cooking the raw egg whites right inside your blender cup before they ever reach the oven.

Frequently Asked Questions
Can I use whole eggs instead of just egg whites?
It is best to stick with egg whites because the yolks add extra moisture and fat that can make the loaf turn out dense and flat.
Egg whites provide the structure and lightness needed to give this low carb loaf its tall, airy texture.
