Ingredients

  • 1 cup Full-Fat Cottage Cheese
  • 4 Large Egg Whites
  • 1/2 cup Warm Water
  • 1 tbsp Apple Cider Vinegar
  • 2 cups Blanched Almond Flour
  • 1/3 cup Psyllium Husk Powder
  • 1 tbsp Baking Powder
  • 1 tsp Sea Salt
  • 1 tbsp Blanched Almond Flour, For Dusting
  • 1/2 tsp Flaky Sea Salt

Equipment

  • blender

Instructions

  • Preheat the oven to 350°F with a rack in the lower-middle position. Line a baking sheet with parchment paper.
  • Add the cottage cheese, egg whites, warm water and apple cider vinegar to a blender. Blend until completely smooth and slightly frothy.
  • In a large bowl, whisk together 2 cups almond flour, the psyllium husk powder, baking powder and sea salt, making sure there are no lumps of psyllium.
  • Pour the blended mixture into the dry ingredients and mix for about 30 seconds, just until a soft dough comes together. Let the dough rest for 5 minutes so it firms up.
  • With wet hands, shape the dough into a round dome about 6 inches wide and 2.5 inches tall and place it on the prepared baking sheet.
Dust the top with 1 tbsp almond flour and sprinkle with the flaky sea salt.
  • Bake for 60 to 70 minutes, until the crust is deep golden brown and the loaf sounds hollow when tapped on the bottom.
  • Transfer the loaf to a wire rack and cool completely, at least 1 hour, before slicing. The crumb finishes setting as it cools, so slicing too early can make it seem gummy.
