Traditional carrot cake is usually loaded with sugar and white flour, which does not fit into a keto routine.
That is why I created this keto cottage cheese carrot cake, so you can enjoy a rich slice of cake without worrying about extra carbs.

Blending cottage cheese into the batter makes the crumb soft and adds a good boost of protein. You cannot taste the cheese at all once it bakes with the warm spices.
To make it even better, I topped it with a rich cream cheese frosting that keeps everything low carb and keto friendly.
It is a wonderful dessert to make when you want something comforting that still fits your daily goals.
Why You’ll Love This Recipe
Ultra Moist Texture – Blended cottage cheese makes this cake amazingly moist without leaving any weird aftertaste or chunky bits.
Classic Bakery Flavor – Warm spices and brown sweetener deliver the authentic carrot cake flavor you dearly miss on keto.

Rich Tangy Frosting – The sweet cream cheese frosting is smooth, velvety, and tastes just like traditional bakery versions.
Hidden Protein Boost – Full-fat cottage cheese adds nutritious protein while keeping each slice fully low carb and guilt-free.

Tips
Blend the Cottage Cheese Until Completely Smooth
I recommend using a small blender or food processor until the cottage cheese looks just like sour cream. You do not want any tiny white curds left in the mixture.
If you skip this step, those curds will melt unevenly in the oven and create wet spots in your cake. A smooth puree gives you the softest, most even crumb.
Squeeze the Excess Moisture From the Carrots
From my experience, freshly grated carrots can hold way too much water for a low carb batter. Almond flour cannot soak up extra juice the way regular flour does.

I like to wrap the grated carrots in a clean paper towel and give them a gentle squeeze over the sink. You want them moist, but not dripping wet, so your cake stays light instead of soggy.
Let the Batter Rest Before Baking
Once you mix everything together, let the bowl sit on the counter for about five minutes before pouring it into your baking pan.
Coconut flour is very thirsty and takes a few moments to absorb the wet ingredients. Giving it a quick rest allows the batter to thicken up properly so it bakes evenly.
