I always loved weekend mornings with warm cinnamon rolls from the bakery, but standard pastries have way too much sugar.
That is why I created this keto cottage cheese cinnamon roll cake to enjoy those same cozy flavors at home.

Blending cottage cheese directly into the batter keeps the crumb moist and soft, while also adding some extra protein.
Because the recipe is low carb and keto friendly, you can enjoy a thick slice without breaking your healthy eating habits.
Spread the sweet cream cheese glaze over the top while it is still warm, and you have an easy treat for any day of the week.
Why You’ll Love This Recipe
Unbelievably Moist Crumb – Blended cottage cheese gives this cake an ultra-soft, tender crumb that never tastes dry.
Authentic Bakery Flavor – Every bite delivers the sweet, buttery warmth of a classic cinnamon roll without the carbs.

Effortless to Make – You get pure cinnamon roll goodness without needing to knead dough, roll pastry, or proof yeast.
Sneaky Protein Boost – Wholesome cottage cheese and fresh eggs add satisfying protein to support your daily keto goals.
Recipe Ingredients
For the Cake
- 2 cups Almond Flour
- 2 tbsp Coconut Flour
- 1/2 cup Granulated Erythritol Sweetener
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 3 Large Eggs, Room Temperature
- 3/4 cup Full-Fat Cottage Cheese
- 1/4 cup Unsalted Butter, Melted
- 2 tsp Vanilla Extract
For the Cinnamon Swirl
- 1/4 cup Unsalted Butter, Melted
- 1/3 cup Brown Sugar Substitute
- 1 tbsp Ground Cinnamon
For the Glaze
- 2 oz Cream Cheese, Softened
- 1/3 cup Powdered Erythritol Sweetener
- 2 tbsp Heavy Cream
- 1/2 tsp Vanilla Extract
How To Make
Step 1
Preheat the oven to 350°F. Grease a 9×9-inch baking pan and line it with parchment paper.
Step 2
Blend the cottage cheese until smooth. Whisk it with the eggs, melted butter and vanilla, then stir in the almond flour, coconut flour, sweetener, baking powder and salt until a thick batter forms.
Step 3
Spread the batter evenly into the pan.
Step 4
Stir together the melted butter, brown sugar substitute and cinnamon for the swirl. Drizzle it over the batter in lines, then drag a butter knife or skewer through it in a zigzag pattern to create swirls.
Step 5
Bake for 30 to 35 minutes, until golden and a toothpick in the center comes out clean. Let it cool for 15 minutes.
Step 6
Whisk the cream cheese, powdered sweetener, heavy cream and vanilla until smooth and pourable.
Step 7
Drizzle the glaze over the warm cake so it melts slightly into the swirls. Slice and serve warm or at room temperature.

Tips
Blend the Cottage Cheese Completely Smooth
I’ve found that using a blender or small food processor is necessary to get rid of every single curd before mixing the batter.
Stirring it by hand leaves tiny lumps that stay intact during baking and alter the crumb of the cake.
You want the cottage cheese to look like smooth sour cream so it blends seamlessly into the flours.
Use True Room Temperature Eggs
If your eggs are chilled straight from the fridge, they will instantly harden the melted butter into small solid pieces.

This creates an uneven batter and leaves oily pockets in your finished cake.
My favorite trick is to place cold eggs into a bowl of warm tap water for five minutes before cracking them.
Spread the Batter With a Damp Spatula
Because almond flour and coconut flour absorb moisture so quickly, this batter becomes very thick and will not pour into the pan.
You’ll get the best results if you use a silicone spatula lightly coated with water to push the batter evenly into the corners.
The thin layer of water stops the dough from sticking to your tool without watering down the cake.

Frequently Asked Questions
Can you taste the cottage cheese in this cake?
Not at all! Once you blend it smooth, the cottage cheese disappears completely into the batter.
It simply gives the cake a moist, fluffy crumb while adding extra protein to your low carb treat.
