If you love cinnamon rolls but want to keep things healthy, these keto cottage cheese cinnamon roll cookies are for you.

I really missed bakery treats when I switched to eating low carb. Most traditional pastries have too much sugar and leave you feeling tired.
Adding blended cottage cheese directly into the dough keeps each bite soft while adding some extra protein.

You still get that sweet cinnamon swirl and a creamy glaze on top, just without all the sugar.
They are completely keto friendly and make a great snack to keep in the fridge for the week.
Why You’ll Love This Recipe
Classic Bakery Flavor – Rich cinnamon swirl brings authentic pastry flavor straight into every single low carb bite.
Incredibly Soft Texture – Blended cottage cheese creates a tender, melt-in-your-mouth cookie without any dry graininess.

Luscious Cream Cheese Glaze – The velvety vanilla icing delivers that iconic sweet bakery finish everyone loves on rolls.
Natural Protein Boost – Cottage cheese quietly adds wholesome protein without altering the sweet cinnamon roll taste.

- 1/4 cup Unsalted Butter, softened
- 1/3 cup Granulated Monk Fruit Sweetener
- 1 Large Egg Yolk
- 1 tsp Vanilla Extract
- 2 cups Blanched Almond Flour

- 1/2 tsp Xanthan Gum
- 1/4 tsp Salt
For the Cinnamon Filling

- 2 tsp Ground Cinnamon
For the Glaze
- 1/3 cup Powdered Monk Fruit Sweetener
- 1 oz Cream Cheese, softened
- 1 1/2 tbsp Heavy Cream
- 1/4 tsp Vanilla Extract
How To Make
Step 1
Blend the cottage cheese in a small blender or food processor until completely smooth.
Step 2
Beat the butter and sweetener until creamy, then beat in the blended cottage cheese, egg yolk, and vanilla. Add the almond flour, coconut flour, baking powder, xanthan gum, and salt, and mix into a smooth dough. Chill for 20 minutes.
Step 3
Place the dough between two sheets of parchment paper and roll it into a rectangle about 8 x 10 inches. Peel off the top sheet.
Step 4
Brush the melted butter over the dough. Mix the brown sweetener and cinnamon, then sprinkle it evenly on top.
Step 5
Using the bottom parchment to help lift, roll the dough up tightly from the long side into a log. Pinch together any cracks. Wrap the log in the parchment and freeze for 30 minutes, until firm enough to slice.
Step 6
Preheat the oven to 350°F and line a baking sheet with parchment paper. Slice the log into 1/2 inch rounds and place them 1 1/2 inches apart.
Step 7
Bake for 12 to 14 minutes, until golden at the edges. Cool on the baking sheet for 15 minutes.
Step 8
Whisk the powdered sweetener, cream cheese, heavy cream, and vanilla until smooth. Drizzle over the warm cookies and let set for 10 minutes.

Tips
Blend the Cottage Cheese Completely Smooth
Make sure there are zero curds left in your cottage cheese before mixing it into the dough. It should look just like smooth sour cream.
From my experience, any small lumps left behind will create soggy wet pockets inside your baked cookies.
A small blender or bullet cup works best here because standard blenders might struggle with such a small amount.
Use the Parchment Paper to Roll the Log
Keto dough does not have gluten, so it is much more delicate than standard cookie dough.

I recommend using the bottom sheet of parchment paper to slowly push and lift the dough forward as you roll it up.
If you try to lift the dough with your bare hands, it will stick to your fingers and tear apart.
Keep the Log in the Freezer Long Enough
You will get the best results if the rolled dough feels completely firm to the touch before you begin slicing.
If the dough is still soft in the center, your knife will squash the rounds flat instead of keeping that round cinnamon swirl.
If your freezer is full or runs warm, leave the log in for an extra 10 to 15 minutes just to be safe.
