Finding a good crunchy snack on a keto diet can be tough when you miss regular chips or crackers.
That is why I started making these keto cottage cheese ranch crackers at home whenever I want something savory to munch on.

Blending cottage cheese into the dough keeps them light, while almond flour and parmesan give them a great texture that bakes up nice and crisp.
The dried herbs bring in that classic ranch flavor that works so well for dipping or eating straight from the pan.
Best of all, they are low carb and keep you feeling full without messing up your daily carb counts.

Recipe Ingredients
For the Dough
- 1/2 cup Full Fat Cottage Cheese
- 2 tbsp Melted Butter
- 1 1/2 cups Almond Flour
- 1/2 cup Grated Parmesan Cheese
- 1 tsp Dried Dill
- 1 tsp Dried Parsley
- 3/4 tsp Garlic Powder
- 3/4 tsp Onion Powder
- 1/2 tsp Dried Chives
- 1/4 tsp Black Pepper
- 1/2 tsp Salt
For the Topping
- 1 tbsp Melted Butter
- 1/2 tsp Dried Dill
- 1/4 tsp Flaky Sea Salt
How To Make
Step 1
Preheat the oven to 325°F and line two baking sheets with parchment paper.
Step 2
Blend the cottage cheese and 2 tbsp melted butter until completely smooth.
Step 3
In a large bowl, whisk the almond flour, parmesan, dill, parsley, garlic powder, onion powder, chives, pepper and salt. Add the cottage cheese mixture and mix until a smooth, slightly firm dough forms.
Step 4
Roll the dough between two sheets of parchment to 1/8 inch thick. Cut out rounds with a 1 1/2 inch round cutter, gather the scraps, reroll and cut again until all the dough is used.
Step 5
Arrange the rounds on the baking sheets, brush them lightly with the remaining melted butter and sprinkle with the dill and flaky sea salt.
Step 6
Bake for 22 to 27 minutes, until golden brown all over and firm to the touch.
Step 7
Cool the crackers completely on the pans to let them crisp up fully before serving.

Tips
Blend Until Completely Smooth
From my experience, you need to run your blender until every single cottage cheese curd disappears. You want it looking like a silky, thick cream before you pour it into the dry ingredients.
If any tiny curds stay whole, they will release moisture while baking. That leaves you with soft, chewy spots instead of an evenly crunchy cracker.
Choose Finely Ground Almond Flour
I recommend using blanched, super-fine almond flour rather than coarse almond meal.

Coarse flour with skins makes the dough crumbly and very difficult to roll out thin. A fine grind absorbs the wet ingredients properly and creates a sturdy cracker that will not fall apart in dip.
Keep the Dough Thickness Even
You will get the best results if you take your time to roll the dough to an even one-eighth inch across the entire surface.
Because almond flour browns quickly, any thin spots will get overly dark before the thicker spots crisp up.
If you find it hard to eyeball the depth, rolling pin guide rings are a simple way to keep the whole slab completely flat.

Frequently Asked Questions
Why are my crackers soft instead of crunchy?
Crackers usually stay soft if they were rolled thicker than 1/8 inch or taken out of the oven too early.
They also need to cool completely on the baking pan, as they finish firming up while they rest.
