If you miss eating crunchy chips while watching a movie, you are definitely not alone.
Most regular store chips are loaded with corn or flour, which can quickly kick you out of ketosis.

That is why I really enjoy making these keto cottage cheese taco crisps whenever a snack craving hits.
They bake in the oven until they get nice and crunchy, giving you that classic chip texture without any grains.
Because this recipe is naturally low carb and keto friendly, you can snack away without feeling guilty or breaking your daily limits.
Why You’ll Love This Recipe

Recipe Ingredients
- 1 cup Full Fat Cottage Cheese
- 1 Large Egg
- 1 1/2 cups Shredded Mexican Blend Cheese, Divided
- 2 tsp Taco Seasoning
- 1 tsp Olive Oil
- 1/2 tsp Lime Zest
How To Make
Step 1
Preheat the oven to 350°F. Line a large rimmed baking sheet with parchment paper and brush it lightly with the olive oil.
Step 2
Blend the cottage cheese and egg until completely smooth and pourable.
Step 3
Stir 1 cup of the shredded cheese and the taco seasoning into the blended mixture.
Step 4
Pour the mixture onto the prepared pan and spread it into a very thin, even layer that covers most of the sheet. Sprinkle the remaining 1/2 cup of cheese evenly over the top.
Step 5
Bake for 25 to 30 minutes, until the sheet is fully set and golden brown on top.
Step 6
Cut the sheet into triangles with a pizza cutter, then flip each piece and spread them apart on the pan.
Lower the oven to 300°F and bake for another 20 to 30 minutes, checking often, until the crisps are deep golden and crunchy.
Step 7
Cool the crisps on the pan for 10 minutes, then sprinkle with the lime zest and serve.

Tips
Blend Until Completely Smooth
You’ll get the best results if you run the blender until every single cottage cheese curd disappears. The liquid should look just like a smooth pancake batter.
From my experience, leaving tiny curds in the mix creates moist wet spots. Those wet spots will stay chewy and prevent your chips from getting crunchy.
Spread to an Even Thickness
I recommend using a silicone spatula to push the batter out into a thin, uniform sheet. Try your best to keep the center just as thin as the outer edges.

If the middle stays thicker than the edges, the outside will get too dark before the center even starts to crisp.
Shred Your Own Cheese
From my experience, freshly grated cheese melts and crisps much better than bagged shredded cheese. Bagged cheese is coated in starches that add unwanted carbs and keep the oils from crisping properly.
Grating a block of cheese at home gives you a much crunchier bite. It also keeps this recipe strictly low carb.

Frequently Asked Questions
Can I use low fat or nonfat cottage cheese instead?
Full fat cottage cheese works best because lower fat options contain much more water, which makes the crisps soft and soggy.
If you only have low fat on hand, drain it in a fine strainer first to remove as much extra liquid as possible.
