- 1 cup Full Fat Cottage Cheese
- 1 Large Egg
- 1 1/2 cups Shredded Mexican Blend Cheese, Divided
- 2 tsp Taco Seasoning
- 1 tsp Olive Oil
- 1/2 tsp Lime Zest
Preheat the oven to 350°F. Line a large rimmed baking sheet with parchment paper and brush it lightly with the olive oil.
Blend the cottage cheese and egg until completely smooth and pourable.
Stir 1 cup of the shredded cheese and the taco seasoning into the blended mixture.
Pour the mixture onto the prepared pan and spread it into a very thin, even layer that covers most of the sheet. Sprinkle the remaining 1/2 cup of cheese evenly over the top.
Bake for 25 to 30 minutes, until the sheet is fully set and golden brown on top.
Cut the sheet into triangles with a pizza cutter, then flip each piece and spread them apart on the pan.
Lower the oven to 300°F and bake for another 20 to 30 minutes, checking often, until the crisps are deep golden and crunchy. Cool the crisps on the pan for 10 minutes, then sprinkle with the lime zest and serve.
