These keto crack chicken meatballs are one of my favorite things to make when I want something easy but seriously delicious. They’re loaded with ranch flavor, cream cheese, bacon, and melted cheddar.

  • 1 1/2 lb Ground Chicken
  • 4 oz Cream Cheese, softened
  • 1/3 cup Almond Flour
  • 1 Large Egg
  • 1 packet (1 oz) Ranch Seasoning Mix
  • 1/4 tsp Black Pepper

  • 1 1/2 cups Shredded Sharp Cheddar Cheese
  • 6 slices Cooked Bacon, crumbled
  • 3 tbsp Sliced Green Onions
  • Ranch Dressing, for drizzling

How To Make

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the ground chicken, softened cream cheese, almond flour, egg, ranch seasoning mix, and black pepper. The mixture will be quite soft and sticky. Mix until the cream cheese is fully incorporated.

Step 3

Using slightly wet hands, scoop and shape the mixture into about 18 meatballs. Place them on the prepared baking sheet, spacing them about an inch apart.

Bake for 18 minutes until the meatballs are firm and lightly golden on the outside.

Softened Cream Cheese Matters

You want to get about 18 meatballs out of this batch, which means each one should be roughly the size of a golf ball. If you make them too big, the outside will start to dry out before the inside is fully cooked.

A cookie scoop works great here if you have one. It keeps them all the same size so they cook at the same rate and you don’t end up with some overcooked and some undercooked.
