These keto crack chicken meatballs are packed with flavor and perfect for snacking or meal prep. Low carb and keto friendly, they're a must-try crowd-pleaser.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, softened cream cheese, almond flour, egg, ranch seasoning mix, and black pepper. The mixture will be quite soft and sticky. Mix until the cream cheese is fully incorporated.
Using slightly wet hands, scoop and shape the mixture into about 18 meatballs. Place them on the prepared baking sheet, spacing them about an inch apart.
Bake for 18 minutes until the meatballs are firm and lightly golden on the outside.
Remove from the oven and top each meatball with a generous pinch of shredded cheddar cheese. Return to the oven for 3 to 4 minutes until the cheese is fully melted and bubbly.
Transfer the meatballs to a serving platter. Sprinkle the crumbled bacon and sliced green onions over the top, then finish with a drizzle of ranch dressing. Serve warm.
