- 4 (6 oz) Salmon Fillets
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Italian Seasoning
- 2 tbsp Olive Oil
- 3 tbsp Butter
- 4 cloves Garlic, minced
- 1/2 cup Sun-Dried Tomatoes in Oil, chopped
- 1 cup Heavy Cream
- 1/2 cup Chicken Broth
- 1/2 cup Grated Parmesan Cheese
- 3 cups Fresh Baby Spinach
- 1 tsp Red Pepper Flakes
How To Make
Step 1
Pat salmon dry and season both sides with salt, pepper, and italian seasoning.
Step 2
Heat olive oil in a large skillet over medium-high heat. Sear salmon skin side down for 4 minutes, flip, and cook another 3 minutes until just cooked through. Transfer to a plate.
Step 3
Lower heat to medium and add butter to the same skillet. Add garlic and sun-dried tomatoes and saute 1 minute until fragrant.
Step 4
Pour in chicken broth and heavy cream, scraping up any browned bits. Simmer 3-4 minutes until slightly thickened.
Step 5
Whisk in parmesan and red pepper flakes until smooth. Add spinach and stir until just wilted, about 1 minute.
Step 6
Nestle the salmon fillets back into the sauce and spoon sauce over the top. Simmer gently 2 minutes to warm through, then serve.

Tips
Pull the Salmon out Slightly Undercooked
When you sear the salmon in step 2, take it off the heat when the center still looks a tiny bit translucent. It’s going back into the hot sauce at the end, so it will keep cooking.
If you fully cook it during the sear, by the time you nestle it back into the sauce it’ll be overcooked and dry. You want it just barely underdone when it hits the plate the first time.
You’ll know it’s ready to pull when the sides feel firm but the very center still has a little give when you press it gently with a finger.
Don’t Skip Patting the Salmon Dry
This step makes or breaks the sear. If the surface of the salmon is wet, it will steam in the pan instead of getting that golden, crispy crust. Use a paper towel and press firmly on all sides right before seasoning.

A dry surface plus a hot pan is what gives you that restaurant-quality color and texture on the outside. You’ll notice a huge difference compared to tossing it in without drying.
Keep the Heat Low When Adding Cream and Broth
Once you pour in the heavy cream and chicken broth, keep it at a gentle simmer – not a full rolling boil. If you boil heavy cream too hard, it can break and turn grainy instead of staying smooth and silky.
You want small, lazy bubbles around the edges of the pan. That’s the sweet spot where the sauce thickens properly without separating. It should take about 3-4 minutes to get that slightly thick, spoonable consistency.
