Ingredients
  

  • 4 (6 oz) Salmon Fillets
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Italian Seasoning
  • 2 tbsp Olive Oil
  • 3 tbsp Butter
  • 4 cloves Garlic, minced
  • 1/2 cup Sun-Dried Tomatoes in Oil, chopped
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup Grated Parmesan Cheese
  • 3 cups Fresh Baby Spinach
  • 1 tsp Red Pepper Flakes

Instructions
 

  • Pat salmon dry and season both sides with salt, pepper, and italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Sear salmon skin side down for 4 minutes, flip, and cook another 3 minutes until just cooked through. Transfer to a plate.
  • Lower heat to medium and add butter to the same skillet. Add garlic and sun-dried tomatoes and saute 1 minute until fragrant.
  • Pour in chicken broth and heavy cream, scraping up any browned bits. Simmer 3-4 minutes until slightly thickened.
  • Whisk in parmesan and red pepper flakes until smooth. Add spinach and stir until just wilted, about 1 minute.
  • Nestle the salmon fillets back into the sauce and spoon sauce over the top. Simmer gently 2 minutes to warm through, then serve.
