- 1/4 cup Butter, softened
- 2 tbsp Powdered Erythritol

- 1/4 cup Heavy Whipping Cream
- 2 tbsp Almond Butter

- 1 tbsp Coconut Oil

How To Make
Step 1
Preheat the oven to 325F and line an 8×8 inch pan with parchment paper. Mix the almond flour, softened butter, powdered erythritol, salt, and vanilla until a crumbly dough forms.
Press firmly and evenly into the bottom of the pan. Bake for 14 to 16 minutes until golden around the edges. Let cool completely.
Step 2
Make the caramel by melting the butter in a saucepan over medium heat. Add the brown erythritol and stir until dissolved, about 2 minutes. Pour in the heavy cream and cook, stirring constantly, for 4 to 5 minutes until the mixture thickens and darkens slightly.
Remove from heat and stir in the almond butter, vanilla, and salt until smooth. Let cool for 5 minutes.
Step 3
Pour the warm caramel over the cooled shortbread base and spread into an even layer. Refrigerate for at least 30 minutes until the caramel is firm.
Step 4
Melt the dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth and glossy.
Step 5
Pour the chocolate over the set caramel layer and tilt the pan to spread evenly. Sprinkle with flaky sea salt while the chocolate is still wet.

Refrigerate for at least 1 hour until the chocolate is completely set. Lift out using the parchment and slice into bars with a sharp edge. Let bars sit for 2 minutes at room temperature before serving for the best texture.

Tips
Press the Shortbread Base Really Firmly
This is the foundation of the whole bar, so you want it packed down tight. Use the flat bottom of a measuring cup or a glass to press the dough into the pan as evenly and firmly as you can.
If you leave it loose or uneven, the base will crumble apart when you try to slice the bars later. A well-pressed base also bakes more evenly and gives you that satisfying snap when you bite into it.
Don’t Rush the Caramel
After you add the heavy cream, keep stirring the whole time and let it cook for the full 4 to 5 minutes. You want it to thicken enough that when you drag a spoon through it, it leaves a brief trail before filling back in.

If you pull it off too early, it’ll be too thin and won’t set properly in the fridge. It’ll just slide around under the chocolate layer instead of staying firm.
Also, make sure the brown erythritol is fully dissolved before adding the cream. If it’s still grainy at that point, you’ll end up with a gritty caramel texture.
Let the Caramel Cool Before Pouring
Those 5 minutes of cooling after you take the caramel off the heat really matter. If you pour it directly onto the shortbread while it’s boiling hot, it can melt into the base and make everything soggy.
