Tips
Cook the Strawberry Mixture Down Enough
The strawberry swirl needs to be thick and jam-like before you use it. If it’s too runny, it will sink into the batter and disappear instead of creating that nice marbled look on top.
You’ll know it’s ready when you drag a spoon through it and the trail stays for a second before filling back in. It should coat the back of the spoon and not drip off easily.
If your strawberries were extra juicy and the mixture still looks loose after 7 minutes, just keep cooking it for another minute or two until it thickens up.
Let the Strawberry Mixture Cool Before Swirling
That 10-minute cooling time in the recipe isn’t optional. If you drop hot strawberry mixture onto the batter, it will melt into it and you won’t get clean swirls.
